A little about this coffee's origin:
This coffee comes from the Puebla region of Mexico. Veracruz & Puebla are neighbouring states, and are both coffee producing regions. Along their border, we find one of the most interesting and exotic coffees, with farm elevations ranging from 1500 to 1800+masl. This coniferous cloud forest is home to hundreds of smallholder farmers. This mountain range has unique conditions for coffee; ideal average temperature, sun exposure and precipitation. Jesus Maria coffee receives a shorter fermentation of 24 hours in concrete tanks, and it is then fully washed using spring water before being dried.
